Cheescake Catastrophe!

It seems like every night this week I've been getting to bed after midnight.  I really hate that but all these things keep crowding in either convincing me that it's worth staying up late or just distracting me so I don't know how late it is.  I was so excited and convinced that TONIGHT I would be in bed by 10.  And yet, here I sit at 11:23pm writing this.  Why?  I'll tell you.

I decided to make a cheesecake.  I've never made a cheesecake before, but today, I went to the store and bought the ingredients.  I knew that I would have to wait until the boys were in bed before I attempted such a task.  Even the simplest recipes usually have to be saved for nap time or bedtime.  So at 8pm I put Baby One to bed and started this exciting endeavor.

Now, for the first hour and a half that I was working on said endeavor I was also putting Baby One back in his bed every 2-5 minutes or so.  This probably contributed to some of the following Cheesecake Catastrophes.

Golden Grahams, 12-Ounce Boxes (Pack of 4)Catastrophe #1:  I had only 1 cup of Graham cracker crumbs when I needed 1 1/4 cup.  Fix #1: I proceeded to substitute the final fifth of the crumbs with Golden Grahams cereal.


Catastrophe #2: Realized that I had misread the measuring bowl and had actually crushed 1 1/4 LITERS of graham crackers and Golden Grahams cereal.  Fix #2: I put the remaining crumbs in a Freezer bag and put them back in the graham cracker box to use later (for all the cheesecakes I make).

Ghirardelli Chocolate 60% Cacao Bittersweet Baking Bar, 4-Ounce Bars (Pack of 12)Catastrophe #3: In trying to melt the chocolate (Oh yes, there is chocolate in this cheesecake) I burnt the chocolate.  I've never seen burnt chocolate before.  I realized that I didn't know how to work my microwave (which is relatively new).  Fix #3: I read the instructions (Oh yes, I did!) and tried melting the other half of the chocolate bar all the while thanking GOD that the bar had TWICE the chocolate I actually needed, thus giving me a second chance.

Nordic Ware 55742 9 Inch Leakproof Springform Pan 10 CupCatastrophe #4: I realized that I had no idea how to wrap a springform pan in foil to avoid the water bath leaking in. Fix #4: I looked it up online.  Found no very useful suggestions and did the best I could.  We'll see how it goes.  Who knew there was such a thing as a "Leakproof" Springform pan?

Catastrophe #5: Lumps!  Horror of horrors there were LUMPS in my batter!  I'm hoping the taste is enough to make that forgiveable! Fix #5: Not much of a fix for this one at this point.  I didn't put a couple of larger lumps in though.

Calphalon LRS1805P Contemporary Stainless Special-Value 16-Inch Roaster with Nonstick Roasting RackCatastrophe #6: I put the springform pan with the cheesecake in it in the roasting pan (The only thing I could find that was big enough to put the springform pan in) and went to pour hot water in the roasting pan.  I definitely spilled water on top of my cheesecake.  The aluminum foil is certainly not going to take care of that one.  Fix # 6: Lots and lots and LOTS of paper towels.  I stuck just the corners in until I stopped getting water on them and started getting batter.  I think it's going to work out all right.

Elgin 3514E Bedside Alarm ClockCatastrophe #7: I put the cheesecake in at 11:15 and it's going to take 1 hour and 10 minutes to cook, then, an hour to cool and THEN I can put it in the refrigerator to chill.  This means that I am for sure going to be up past midnight AGAIN.  Fix #7: Somebody help me!  Why do I keep staying up past midnight when I know the babies are going to have me up no later than 7 (and probably more like 6)?



Festive Birthday Balloons 10 Pack 16"So why am I making a cheesecake?  A dear friend of mine is having a birthday soon and I was hoping to surprise her with a cheesecake on Sunday when there will be a gathering at her place.  Even with all the catastrophes and one more late night, she is totally, completely worth it.

I'm just hoping for no Catastrophe 8.

The FLYbaby Diaries

Basically, I "met" a beautiful woman who calls herself FLYlady a long time ago.  You can "meet" her too at www.flylady.net.  She gave me some useful tools for conquering my clutter and keeping my space tidy and I've done it halfheartedly for some time.  Now, I'm committed.  It doesn't have to be perfect, it just has to get done.  This diary will follow my progress in this specific endeavor and hopefully encourage others in the process.

I can't seem to get this updated!

I know, I know.  It's been forever.  Problem is, it's been one thing after another keeping me from posting.  Our computer was giving us fits for a while.  It likes to just turn itself off at random.  It really is quite a dinosaur and I guess I can't blame the poor thing for being tired and ready to join the great network in the sky.  It still does that some, but not as much (for now).  Oh how I wish we could afford a new one, but it will be a while yet before that happens.  Here's hoping this one holds out until we get another one!

Then, Hubby and I share said pitiful computer.  He uses it for job searching and projects that he's being paid for (and to play on) and I often feel like I can't commandeer it for my own purposes.

AND, lately when I've tried to pull up Blogger it won't pull up correctly so that I can actually post something.

Then there are babies and life and all the other things that keep me busy and unable to get on.

Anyway - I do not intend for this to be a pity party!  I just want to explain why it sometimes takes a while for me to update.  Now to let you in on what's been going on:

Baby Two's first birthday was on Monday.  We had his party on Sunday.  I will update with pictures soon if I can.  I try to save my pics for a Wordless Wednesday.

I'm still trying to get reading done in pursuit of becoming a doula.  I finally sat down with my doula and talked to her to get her advice/encouragement/etc.  It was a great meeting and I feel like I have a direction to go in now.  She's incredible!

We're currently having trouble with Baby One's Jack-in-the-box syndrome.  We put him to bed at night and he just keeps popping up.  Sometimes it happens several times in a minute.  Usually I try to be stone cold and put him back to bed as many times as it takes, but somewhere around 15 times I usually loose my cool, spat his leg and say, "You must stay in your bed now."  Sometimes, believe it or not, that works.  It always works for at least 10 minutes and then we have to repeat the process.  Next week I have an idea how I'm going to handle it.  I'll let you know how it goes.

Self-sufficient

Some time ago I wrote about purchasing my domain name through www.GoDaddy.com. Well, for a few weeks now I've been receiving notice that my domain name was up for renewal.  I was worried...  "Hubby and I are both unemployed," I thought, "I can't afford to renew this now."  As it turns out dear readers, thanks to you visiting my blog, sometimes clicking on ads, being twitter followers and sometimes clicking on ads I've placed there, I actually had a little money saved up in my PayPal account!  I knew that there was hope!  Still, it wasn't quite enough.  For a while I wasn't sure what I was going to do. 

Finally I decided to try doing some online surveys, and you know what?  A couple of weeks later, I had enough money in my PayPal account to pay for my domain name renewal!  How exciting!  My online identity is becoming self-sufficient!

New Feature!

Today I will start a new feature on this blog!  I'm so excited!  It's a feature I've seen on many other blogs and longed to partake in myself.  Now that I have a pretty awesome camera phone, I can!  Yay!

 Baby One's second birthday was just about a week ago.  This first one is the cake I made for his party.  It's supposed to be orange and those are m&m's all over it.  Yes, Baby One's name is Riley.
 This one is Baby Two and our only boy cat, Littles, looking out of our sliding glass door.  I think it needs to be a greeting card.
And right after I snapped the first picture of Baby Two and Littles, Littles decided to give Baby Two a kiss.  I thought it was too cute!  It kinda looks like Littles is telling him a secret.

My Dream House - TADBJ

Hubby and I talk about this all the time.  I could really go into much more detail than any of you would really want to hear!  For purposes of this blog entry I'll keep it brief and hit the highlights.

First and foremost we would like a big kitchen.  We love to cook and we love to eat.  A big kitchen means both get done more easily.  Also, big kitchens can be helpful for hosting guests and even family holiday gathering.  A big, walk-in pantry is also ideal.

Second, we need enough bedrooms for everyone to have one (including future children) AND an office and a guest bedroom.  That comes to a total of 8 bedrooms (if all goes according to plan) and an office.

Outside we need lots of parking space for the guests we will inevitably have over.  We love being hospitable but hate showing up to someone's home when they have plenty of room inside for all of their guests but no room outside for all of their guest's cars.

Then we need plenty of outdoor space for a garden or two and a fenced in area for the children to play in.

Okay now - who's buying it for us? LOL!

Seven Days... TADBJ

My to-do list for the next seven days: (This ought to be about as good as my daily schedule... beware!)

Tuesday: 1. Go to the county clerks office and try to make some sense out of getting my new-to-me car that I don't even have in my possession yet titled and registered. (LooooooOOoooooong Story)  2. All my normal daily chores. 3. Go sing at Nashville Work Camp.

Wednesday: 1.Start gathering and labeling stuff for a yard sale on Saturday. 2. All my normal daily chores.
3.Hang out with my dear friend Katie.  

Thursday: 1. All my normal daily chores. 2. Hubby's singing group is performing at Nashville Work Camp and I will be attending.  We will hopefully be hanging out with friends that night as well.  3. I'm hoping to go shopping for Baby One's birthday... we'll see if that happens.

Friday: 1. Last minute prep for the yard sale!  I'm super excited about the sale.  Less excited about the getting up at "stupid o'clock" in the morning to DO the sale.  Shout out to Robin for the terminology! 2. Normal daily chores. 

Saturday: 1. YARD SALE!!!! Yay for hopefully making some money! 2. Normal daily chores.

Sunday: 1. Sunday School and Church. 2. Lunch with "Nonna" (My mother-in-law) 3. Sunday afternoon naps... and sex. (See, Hubby?  At least it made THIS list) 4. Life group with some of the best people Nashville has to offer.

"If I Had a Million Dollars..." TADBJ

If I won the lottery or otherwise ended up with a bunch of money below is my list of what I would do with it.  Yes, I have previously put a lot of thought into it and I would work my way through the following steps until I had purposed all of the money.

1. Give to GOD - (half of the winnings split between my church and a few other charities and/or families in need)
2. Pay off debt
3. Save a year's salary
4. Buy a house
5. Buy a car
6. Invest for retirement.
7. Invest for children's college funds and wedding funds
8. Pay off my parents house.
9. Buy my father-in-law a porsche (inside joke, but I'd do it!)
10. Give to various friends and relatives.


I know this list seems a little boring... but that's my list!

The Hardest Thing... TADBJ

This post is supposed to be about the hardest thing I've ever had to deal with.  Honestly, I have a hard time pinning that down.  I feel like I've been through so much that its hard to pick one thing.  Then, when I really think about it, I haven't been through that much at all.  I've never lost a baby (and been aware of it).  I've never lost my home to a fire.  Aside from grandparents who were old and ready I've never lost a family member.  I've never had cancer.

I lost a cat.  I lost a hamster.  I lost two special dogs in my life.

My family moved when I was 14.  I lost friends and the city where I was very happy.

I have darker things in my past too, but given the time and space they seem to pale in comparison to other things.

Given the grass-is-always-greener mentality that we humans tend to have, I'd say that what I'm going through NOW is hardest, but in reality, never before have I had the blessings that are my sons to brighten my life while I was going through something.

All of that to say that I'm not sure what I can say is the hardest thing I've ever been through.  There isn't a really obvious answer for me

Meanwhile let me just say that GOD is teaching me the true meaning of Joy.  He's teaching me that it isn't something you gain after your life is perfect or pretty much perfect.  Joy is something you can have even when times are tough as long as you are trusting in Him.  That's pretty darn cool if you ask me.

What I Collect - TADBJ

This Theme-A-Day Blog-Journal post is about what I collect.  What HAVEN'T I collected?  At some point in time I have collected coins, rocks, snowbabies and pencils.  My current collection is bottles.  Big bottles, little bottles, old bottles, new bottles, blue bottles, green bottles, colorless bottles, Bottles with the labels off, bottles with the labels on. If it's glass and it's a bottle I'll probably collect it.

The only problem is that now, I have two babies, three cats and nowhere out of reach to display said bottles.  So for now they are stuffed in a box.  I hope that one day soon I can take them out and display them with pride.

My Pet Peeves - TADBJ

There are so many!  I'll just list a few.

1. When people don't swap partners at a dance lesson when everyone else in the room is swapping.  Are you really that jealous of your significant other or just that insecure with your dancing? If you tried it I bet you'd like it (after the initial awkwardness wears off)!

2. When people apologize profusely for everything all the time.  I get tired of telling them "It's okay" all the time when they didn't need to apologize in the first place.

3. When people become Bible scholars and then think that they, and other Bible scholars are the only ones qualified to talk about GOD or have any valid ideas or opinions about GOD, the Bible, Christianity, Theology, or Religion in general.  I've met some Bible Scholars who are great people, great friends, and great Christians.  I've also met some who just seem snooty.  It's the snooty ones who annoy me.

4. When people text and drive, drink and drive, apply makeup and drive, speed while driving, try to "weave" through traffic, or basically anything that endangers the lives of everyone else on the road not to mention themselves.  How selfish can you be?

5. When there is a backup on the highway and people feel like they are privileged and should be allowed to drive on the shoulder.  Or, when a car is turning left on a two lane road and the cars behind said car illegally pass the turning car on the right shoulder.  Or, when cars in a parking lot are illegally driving through empty parking spots and nearly hit my car while I'm on the legal driving path and then look at me as if I'm the idiot.Emergency personnel excluded on all of the above, of course.

6. Cats that wake up sleeping babies.  Enough said. :-)

My Worst Habit - TADBJ

Oh my!  Hubby would have all kinds of answers for this one!  Funny that I would have answers for HIM to.  ;-) I guess that's what happens when you've been married for seven years.

But to spare you all the drama I'll tell you what I think my number one worst habit is.  Watching TV.  Now granted, there is nothing inherently wrong with watching television, but when you seem to do it all day, to the point that it consumes your day and you get nothing (or very little) else accomplished, well... "you might be an addict if..."

As a matter of fact I was just thinking the other day about doing a TV fast.  I'm going to try to do a TV fast one day this week.  I haven't decided what day yet, but I'll let you know how it goes.  If it's very successful I may try a longer fast next.  If it isn't very successful, I'll try again soon.

1. Own my own home - Free and clear with no mortgage.
2. Have a daughter.  Seriously.  I'll adopt if I have to although I'd really prefer have one biologically.
3. Get completely out of debt and never go back.
4. Have enough money to give generously.
5. Visit NYC.  I've always wanted to go.

My Ideal Age - TADBJ

What do I think is the ideal age to be?  This one is also a toughie. For one I'm pretty happy with the age I am now (27).  However, I also look forward to being in my 40's and 50's.  Kids grown (more or less) and things (I hope) start to settle down.  But then there were the awesome teenage years - just innocent enough to have little responsibility and just grown up enough to get some of those perks too (think: driving).  I think two must be pretty awful considering how most two year olds behave.  I guess 5 would be my ideal age.  Young, innocent and not usually in too much of a hurry to grow up.  5 year olds get to have fun and play most of the time and even school is fun at that age.  So there you have it.  5 is my ideal age. :-)

If I could change one thing... TADBJ

I know, I know.  I'm a little late on this one.  All I can say is that life happens and I wouldn't have it any other way.  Now, on to the meat of this post...

The question for today (or yesterday actually) is "If you could change one thing about how you have lived your life thus far, what would it be?"

This is a tough question.  It's easier to tell you what I wouldn't change.  I wouldn't change getting married.  I wouldn't change having my children.  I wouldn't change going to college, although I might change quitting and not going back.  Truth be told though, I really didn't have a clue what I wanted to do or who I wanted to be back then and had I finished school then it probably wouldn't be helping me much now.

So what would I change?  Spending my husband's inheritance-that he got after his grandmothers death-on groceries.  That's really not all we spent it on.  We bought a computer that Hubby really needed, and a car that he really needed.  And we "nickeled and dimed" the rest of it away.  Money was scarce except for that inheritance money, but neither of us had much of a job, nor the motivation to go get one.  So the convenient money to buy groceries with was the money Hubby's grandma left him.  It didn't take very long for it to be whittled all away.  It wasn't a ton of money, but it would have been a nice down payment on a house.

But, you know... you live and learn.  If we ever get a sizable amount of money like that again, we will for sure be trying to spend it more wisely.  Speaking of which, I think PCH.com is calling my name. :-P

Where I Live - TADBJ

We live in a cozy two bedroom, one bathroom apartment in Nashville, TN.  We have a ton of friends living in our complex which works out great when we need a babysitter, or just someone to talk to or "chill" with.  There is a school next door.  I can see it from my window.  Baby one likes to watch out the window while the children are playing on the playground.  It really is a nice apartment, even if it is small.  I could see us living in this complex, if not this apartment until we're ready to buy a house.  I'm so looking forward to that day.

Unfortunately I don't have any pictures to put up.  My camera died.  It's very sad.

Meanwhile, I'm very excited about tomorrow's TADBJ project!  The question is "if you could change something about how you have lived your life so far, what would it be?"  This will take some thought, but I'm psyched!  Visit Toddler Awesome if you are interested in joining the fun!

What I Am Afraid Of - TADBJ

A few of the things I'm afraid of:

1. Bugs (including spiders)
2. Animals or people that are dying.
3. One of the boys getting hurt.
4. People not liking me
5. People who speed
6. Car accidents (see number 5)
7. Getting in trouble (Yes, I'm kind of a goody two-shoes... what does that even mean?)
8. Diseases
9. House fires and floods.
10. Robbers

I actually had a really hard time coming up with this list.  I thought about stopping at three, then at seven.  I finally came up with ten.  It's funny - I could have written ten things Hubby is afraid of very quickly.  For example:

1. Spiders
2. Bathtubs
3. Losing control
4. A family member getting hurt
5. Getting hurt
6. Death
7. Someone not liking him
8. Hurting someone
9. Being a push-over
10. Being a jerk

See? That was much easier.  ;-)

My Wedding - TADBJ

Writing this makes me a little sad.  No, my wedding wasn't sad, and yes, I'm still happily married.  I'm sad because all of my wedding pictures got lost in a move a few years back.  The only one I have left is a picture I took of one of the pictures on my cell phone.  The quality is horrible because it's a picture of a picture (and because it's a cell phone picture).  I've included that lonely picture at the end of this post.

Our wedding was beautiful.  Our colors were purple and pink (no, not at all "Barbie-ish").  My grandfather performed the ceremony.  We each had three attendants.  Mine were my sister, my best friend, and Hubby's sister.  Hubby's were his college roommate, a friend from church, and my brother.  He had a lot more people that he wanted to be in the wedding, so we made them all ushers.  We had a TON of ushers.

Neither one of us were very nervous before, during, or after the ceremony.  I had a bet going with one of my guy friends that Ryan would cry during the ceremony.  He didn't.  Right after the ceremony when we walked out we went into my changing room and he shut the door, put his head down on my shoulder and started bawling.

At our reception, I had my youth minister MC as the attendants and parents came in.  Each person came out to their own song.  We did this in lieu of a receiving line.  I don't remember what everyone walked out to.  I remember that my mom walked out to, "Pretty Woman."  Hubby's dad came out to a song called, "Tightwad" that was written by a friend of ours.  Later we found out he was a little hurt by it.  One of Ryan's groomsmen walked out to the song "Kokomo."  Ryan's old college roommate walked out to the James Bond theme and my sister was introduced to the same song.  They did a quick dance before he "dropped" her and walked off as if he was hoping no one noticed.  We had great food and a TON of cake!

After the reception we changed.  I don't remember what Hubby wore, but I wore the same going away dress my mom wore after her wedding.  It is pale blue and covered with white eyelet lace.  I was so proud that I fit in it.  I'm not sure that I still could.

What Romance Means to Me - TADBJ

This, dear friends, is a great question and one that I'm glad my friend at Toddler Awesome thought to ask.

What does romance mean to me?  The answer is worth pondering and possibly revising regularly.

From my perspective romance is:

  • Loving my husband and supporting him.  
  • It is providing a restful, safe place for him as a confidant, comforter and lover so that no matter where we are he knows that he is home.    
  • It is fighting for him when he needs me, but also letting him fight for me.  
  • It is respecting his leadership by helping with the decision making and helping him lead effectively and appropriately.  
  • It is helping him find balance when life gets crazy.  
  • It is helping him accomplish what he wants to accomplish. 
  • It is letting our children believe that their daddy "hung the moon," while also teaching them that he's human and fallible, but worth loving and respecting anyway.  
  • It is taking time out from my busyness to give him a hug and kiss and tell him that I love him - showing him that he is a priority.  
  • It is not letting him get away with less than his best and making sure he knows that I think he's incredible.  


Romance is

  • My Hubby loving, supporting and providing for me.  
  • It is his willingness to fight for me and let me know that I'm worth fighting for.  
  • It is leading me when I need led, but respecting my opinion enough that we can make decisions together.  
  • It is helping me improve on myself while also complimenting my good qualities.  
  • It is helping me get where I want to get and accomplish what I want to accomplish.  
  • It is teaching our children to respect and honor me.  
  • It is letting me sleep in sometimes when I'm really tired.  
  • It is going above and beyond to let me know that I'm loved and appreciated.  

The Five Senses - TADBJ

What my five senses are experiencing right now:

See:  My computer screen and a slight reflection of the lamp behind me.  Also the clutter on the desk that is threatening to eat my computer monitor.

Taste: Chocolate Ice Cream.  Shhh... don't tell.

Touch: I feel a little warm in an unseasonable long sleeve tee because I need to do laundry, lol.

Smell: NOTHING.  Which is a great thing when you have three cats and two babies living with you.

My Favorite Foods - TADBJ

It is so hard to pick a favorite food or even a favorite restaurant.  So I'm going to give you a list of my 5 favorite foods.

1. Tomatoes.  I've loved them since I was a little, little (little) girl.
2. Guacamole.  I especially like my homemade variety.
3. Mexican.  Just about any old Mexican restaurant will do.
4. BoJangles cajun chicken biscuit with fries.  Mmmmmm...
5. Roast with all the trimmings.  Potatoes, carrots, green beans, rolls, etc.

Now that my mouth is watering I'm going to go find something to eat...

Now for an honorable mention that probably should be in my original ten but simply didn't fit the format.
